The smell inside the Chez Papa is heavy with fresh garlic and butter. It comes from the topping on the restaurant’s signature salads, Salade Landes. It’s freshly fried potato chips tossed in garlic butter just before piled on top of a rustic salad with confit duck legs and lardons.
I made a variation of the salad today, but not topped with duck confit, but with shrimp.
